Commissioner Sassafrass is one of the oldest figures in Infinity Knights society. He was portrayed by Scottish actor Sean Connery in Season 20 and the 2008 Specials.
Sassafrass opened the first police department on Kayaclasch and, according to legend, invented the name of "Infinity Knights". By the time of the Inspector's life, he had already retired for centuries, but it was rumoured he was still alive somewhere.
History
In "Five Inspectors, One Time Booth", the Fifth Inspector and her three predecessors found the old kitchen of Sassafrass and learned he discovered a recipe for immortality. The Inspectors kept his secret, and Sassafrass would not be seen again during the classic series.
In "The Last Minutes", it is shown that the Infinity Knights reinstalled Sassafrass as their Commissioner during the Time Wave. In the episode he personally fights the Tenth Inspector and the Sergeant and is eventually sent back into the wave.
Trivia
Sassafras is known for his Cosmic Sporran, which contains unknown power. Its abilities are on par with the Inspector's Optic Pocketknife.
